CHICKPEA AND QUINOA BURGERS

Hope you're all having a great second week back to school or simply second week of September at work. It seems the weather has officially dipped into Fall, but that doesn't mean we should stop eating like it's summer! Even though this may be the last few weeks to barbecue, I chose to make something fun, healthy and different from the staple meat on the grill. These burgers are so easy to make and are packed with flavour and nutrients. Check out the recipe below and let me know what you think!


CHICKPEA AND QUINOA BURGERS

Cook time: 20 mins
Total time: 45 mins
Yield: 8 patties
Ingredients
  • 1 can chickpeas (rinsed and drained)
  • 1 cup cooked quinoa
  • 2 shallots (chopped)
  • 1/3 cup fresh cilantro (rinsed)
  • 1 bell pepper (chopped)
  • 1 clove of garlic (chopped)
  • 1/2 tsp paprika
  • 1/2 tsp tumeric
  • 1 egg
  • 1 medium carrot (grated)
  • 1 small zucchini (grated)
  • 2 tbsp olive oil
  •  1/3 cup breadcrumbs
  • salt and pepper to taste
Cooking Directions
  1. In a food processor, add rinsed and drained chickpeas, cooked quinoa, chopped shallots, cilantro, chopped bell pepper, garlic, paprika and tumeric. Add in egg and pulse for 1 minute.
  2. Wash and peel carrot and zucchini and grate them into a bowl. Add mixture from food processor to this bowl and mix.
  3. Set a large plate aside with Parchment paper and a smaller plate with 1/3 cup of breadcrumbs. Scoop a 1/2 cup portion of the mix, form patty with hands, dust in breadcrumbs and set on the large plate. Repeat for the rest of the bowl. If you prefer a crunchier option, make them into falafel-sized patties (approximately 24). 
  4. Turn on burner to medium high heat and add 1 tbsp of olive oil to a large frying pan. Once hot, add in 4 patties and let cook 5 minutes on each side. Repeat for the remaining patties.
  5. Serve immediately and enjoy.
Depending on your health and fitness goals, you can have the patties in a pita with some tzatzeki on top or over a salad to lower your carb intake.
