Dinner: Stuffed Peppers and Zucchini with Quinoa Salad and Marinated Chicken Breast

Recipe: Stuffed Peppers
This is the standard recipe I use for stuffed quinoa peppers (minus the feta) where 1 serving is equivalent to one half pepper. For the zucchini, I included appproximately 1/3 or 1/4 cup of the quinoa salad which would be approximately 80-100 cals depending on the size.

I love this recipe because you can make the peppers or zucchini in bulk and then bake them as you need them during the week. They are really good with feta on top but a dairy-free option would be dried cranberries or roasted pine nuts.
