Perfect New Year's Eve dessert to enjoy with guests while still keeping up with your healthy goals!
Prep time: 10 mins
Total time: 40 mins
Yield: 10 bites

  • 1/4 cup organic cocoa powder
  • 1/2 cup plain rolled oats
  • 1/2 cup almond butter
  • 1 tbsp vanilla extract
  • 5 tbsp real maple syrup
  • 1/2 cup shredded coconut flakes
  • 1/4 cup chopped pecans (or walnuts)
Cooking Directions
  1. Mix the cocoa powder, oats, almond butter, vanilla and 4 tbsp of maple syrup in a bowl.
  2. In 3 small bowls, add maple syrup, coconut and pecans respectively. 
  3. Form small, bite-sized rounds of the mixture, dip in maple syrup and then coat with either pecans or coconut. Repeat until you have 10 energy bites! If you choose pecans, make sure to press them in so they stay more effectively.
  4. Let sit in the fridge for at least 30 minutes and enjoy!
