Getting back to the blog, I thought I'd start off with a light and delicious recipe for Spring in collaboration with Canada's favorite kitchenware store, Stokes and their lifestyle blog, Stokes Saturdays.

Creamy Pesto Zucchini Noodles

A simple Spring recipe that ensures you eat more vegetables throughout your day!
Prep time: 10 mins
Cook time: 10 mins
Total time: 20 mins
Yield: 4 servings

  • 4 zucchinis
  • 1 red pepper
  • 2 cups cherry tomatoes
  • 1/2 cup Greek yogurt
  • 1/2 cup pesto
  • 1/4 cup pine nuts (or sliced almonds)
  • 1 tbsp olive oil

Cooking Directions
1.  Wash zucchini and use Spiral cutter to form zucchini noodles. Place in a bowl and set aside.

2.  Wash and chop peppers and cherry tomatoes and add to the bowl.

3.  Fry pine nuts with a tbsp of olive oil in a pan until browned.

4.  Heat pesto in a large pot on low until warm and liquified. Mix in greek yogurt and then add zucchini noodles, peppers and tomatoes.

5.  Mix until zucchini is completely coated, plate and top with finely chopped pine nuts. 

Serve and enjoy!
