APPLE SPICE CAKES

Recipe: Individual Apple Cakes Baked in Mason Jars 



Perfect Fall recipe to impress your Thanksgiving guests! These individual treats are so easy to make and a great way to use some seasonal fresh apples. I really felt like something with apple and cinnamon, so I started adding one ingredient after another to try and balance this recipe between healthy and dessert. This is what I came up with...

Apple Spice Cake
Individualized Mason jar cakes for entertaining or dessert meal prep!
Ingredients

Wet Ingredients
  • 3/4 cups of milk
  • 1/3 cup butter
  • 2 eggs
Dry Ingredients
  • 3/4 cup oats
  • 3/4 cup whole wheat flour
  • 1/2 tsp all spice (cinnamon, nutmeg, cloves)
  • 3 tsp sugar or stevia
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
 Last Ingredrients
  • 2 apples (peeled and cut into small pieces)
  • 1/3 cup maple flakes
  • 1/3 cup chopped almonds
  • 2 tsp cranberries
Instructions
1. Add all the dry ingredients to a bowl. (Oats, flour, all spice, sugar, baking powder, baking soda)2. Melt butter in the microwave for about 40 seconds (if frozen) and mix all wet ingredients in a separate bowl. 3. Peel and cut apples and set aside. Chop almonds and do the same. 4. Gradually mix together your dry and wet ingredients. Then, add cut apples, maple flakes and almonds. 5. SPRAY mason jars with any kind of cooking spray. Very important step in order to be able to eat the cake once it's cooked. 6. Add 1/4 of the mixture to each mason jar and top with more maple flakes, almonds and cranberries. 7. Put the mason jars on a baking sheet and bake on 350 for 35 minutes. Pierce one of the cakes with a toothpick to make sure it's cooked through. 8. Enjoy!

Note: You can serve this light treat with a bit of maple syrup or agave (if it's not at your desired sweetness) as well as with some plain frozen yogurt. Get creative and have a great Thanksgiving!
