ALMOND BLUEBERRY OATMEAL

Breakfast: Rolled Oats with Blueberries, Almond Butter and Chopped Almonds

Breakfast: Rolled Oats with Blueberries, Almond Butter and Chopped Almonds
Some mornings I just feel like oatmeal but it happens to be the one thing I really don't like to make. So... I've come up with a straight-forward way to make it so that it's time efficient but doesn't lack in nutrition. Most people make the mistake of using instant oatmeal in the common pre-made flavours such as 'Apple Cinnamon' or 'Maple Brown Sugar.' While they are pretty good and incredibly simple to make, they are loaded with sugar and do not represent the health benefits oatmeal has to offer.

Directions
I start by boiling 3 cups of water and add about 1 and a half cups of plain rolled oats. After giving it a stir, I reduce the heat and let the oats cook for about 6 minutes. During this time, I race to microwave a tsp of almond butter and natural passion fruit syrup. (Thanks to my trip to Hawaii, I have this organic syrup at my disposal but I suggest substituting it for a tsp of honey or maple syrup!) I then mix it really well, adding a splash of almond milk to thin it out and a 1/2 tsp of all-natural vanilla extract. Next, I chop about 2 tsp of almonds and wash a handful of blueberries. (Can be substituted for almost any fruit that tastes good with almond butter if blueberries aren't your style, but they do have some of the greatest health benefits among berries.)

By this time (after a few stirs) the oats should be ready! If you ran out of time, just take the oats off the burner to cool a bit. You have about 3-4 servings of oats right in front of you, meaning not only do you have your breakfast ready for today, but now you only have to make your toppings each day and heat up a serving at a time in the microwave. Easy!

Grab a bowl, add your oatmeal, your almond syrup, your chopped almonds and your blueberries and you are done!

Hope this recipe was easy to follow! Happy Monday!
